Chocolate Chip Whoopie Pies

I recently purchased Love Food’s Whoopie Pies book on offer, and coudn’t wait to try some of the yummy looking whoopie pies. These delicious whoopie pies are made of two soft chocolate chip cookies sandwiched with a gorgeous chocolate filling.

Makes 10 | Preparation Time: 15 minutes | Cooking Time: 20 minutes

Ingredients Required:

  • 250g Plain Flour
  • 115g Unsalted Butter (softened)
  • 150g Soft Light Brown Soft Sugar
  • 1 teaspoon Bicarbonate of Soda
  • Large pinch of Salt
  • 1 Large Egg (beaten)
  • 150ml Soured Cream
  • 85g Milk Chocolate Chips/Drops

For the chocolate filling:

  • 150ml Double Cream
  • 115g Unsalted Butter (softened)
  • 150g Plain Chocolate (broken into pieces)

Method:

  • Preheat oven to 180C/160C Fan/350F/Gas Mark 4. Line 2-3 large baking trays.
  • Sift together the plain flour, bicarbonate of soda and salt.
  • Place the butter and sugar in a large bowl and whisk until pale and fluffy.
  • Whisk in the egg, followed by half the flour mixture and then the soured cream.
  • Stir in the rest of the flour mixture and mix until thoroughly combined.
  • Stir in half the chocolate chips.
  • Pipe or spoon 20 mounds of the mixture onto the prepared baking trays, spaced well apart to allow for spreading.
  • Sprinkle over the rest of the chocolate chips.
  • Bake in the preheated oven for 10-12 minutes, or until risen and just firm to the touch. Transfer to a wire rack to cool.
  • For the filling, place the chocolate and butter in a heatproof bowl over a pan of simmering water and leave until melted, stirring ocassionally. Remove from the heat and cool for 20 minutes. Stir the cream into the cooled chocolate then chill in the fridge for 10-15 minutes or until firm enough to spread.
  • To assemble the whoopie pies, spread or pipe the chocolate filling on the flat side of half of the cakes. Top with the rest of the cakes.
