Mornings can be busy, especially when you’re feeding a large family, so having breakfast already prepared can make life so much easier.
In this meal prep I decided to bulk prepare several breakfasts that could be grabbed quickly in the morning, reheated or frozen for later.
I made four different breakfast ideas: eggy breakfast fingers, chocolate chip flapjacks, berry pancakes and savoury potato, salami and cheese waffles.
These are also great ideas if you’re looking for breakfasts that you can prepare ahead for busy school mornings.
Eggy Breakfast Fingers
I wasn’t quite sure what to call these, so eggy fingers it is!
They’re essentially an all-in-one baked breakfast with bread, egg, salami and cheese. Once baked, you can slice them into fingers that are easy to pick up and eat.
Ingredients
- 12 slices of bread
- Salami slices
- 12 eggs
- Spring onions, chopped
- 1 tsp salt
- ½ tsp ground ginger
- 1 tsp paprika
- ½ tsp coarse black pepper
- 1 tsp baking powder
- Grated cheese
Method
Grease a large baking dish or tray.
Remove the crusts from the bread and arrange the slices in the dish. I used two layers of bread as I found a single layer would have been a little thin.
Add a layer of salami over the bread. You could easily change this filling and use chicken, tuna or another filling your family enjoys.
Crack the eggs into a large bowl and add the spring onions, salt, ground ginger, paprika, black pepper and baking powder.
Whisk everything together well and pour the egg mixture evenly over the bread and salami.
Finish with a generous layer of grated cheese.
Bake for approximately 15–20 minutes, checking regularly until the egg is cooked through and the cheese is golden.
Allow it to cool slightly before cutting into fingers.
These are particularly handy for busy mornings because you’ve essentially got your bread, eggs, filling and cheese all in one.
Chocolate Chip Flapjacks
Flapjacks are brilliant for preparing in bulk because they’re easy to portion and store. The porridge oats also make them quite filling.
Ingredients
- 250g butter
- 500g porridge oats
- 250g caster sugar
- Approximately 5–6 tbsp golden syrup
- Dark chocolate chips
- White chocolate chips
Method
Melt the butter in a large pan over a low to medium heat.
Add the porridge oats and stir them into the butter.
Add the caster sugar and cook for another couple of minutes before stirring in the golden syrup.
Turn off the heat and add the dark and white chocolate chips.
You could replace the chocolate with raisins, sultanas or another addition you enjoy.
Divide the mixture between two cake tins and press it firmly down using the back of a spoon.
Bake for approximately 15 minutes, or until golden brown.
Make sure you cut the flapjacks into portions while they’re still warm. Once they’ve completely cooled and hardened, they’re much more difficult to slice.
Berry Pancakes
These are simple pancakes with strawberries and raspberries added to the batter.
You could use different berries, add another fruit or simply leave the fruit out and make plain pancakes.
Ingredients
- Strawberries
- Raspberries
- 3 eggs
- 260ml milk
- 270g plain flour
- 4 tbsp caster sugar
- 1 tsp baking powder
- ½ tsp salt
Method
Slice your strawberries and raspberries into small pieces and set them aside.
Add the eggs and milk to a large mixing bowl and whisk together.
In a separate bowl, combine the flour, caster sugar, baking powder and salt.
Sift the dry ingredients into the egg and milk mixture.
Mix everything together until you have a smooth pancake batter, then gently stir in the berries.
Grease a frying pan and cook your pancakes in batches.
These are particularly useful for meal prep because you can keep them in the fridge or freeze them for later. When you need one, simply reheat it – I like popping them in the toaster.
Potato, Salami & Cheese Waffles
Finally, I made some savoury waffles using potato, salami and cheese.
These turned out really tasty, and you don’t actually need a waffle maker to make them. You can cook the same mixture in a frying pan and make savoury pancakes instead.
Ingredients
- Approximately 4 cups grated potato
- 2 eggs
- 1½ cups plain flour
- 4 tbsp sunflower oil
- 160ml milk
- Spring onions, chopped
- ½ tsp salt
- ½ tsp baking powder
- 100g salami, chopped
- 100g grated cheese
- Coarse black pepper
Method
Peel the potatoes and grate them. I used my mini chopper to make this job much quicker.
Add approximately four cups of the grated potato to a large bowl.
Add the eggs, flour, sunflower oil, milk, spring onions, salt and baking powder.
Chop the salami into small pieces and add it to the mixture along with the grated cheese and a little coarse black pepper.
Mix everything together really well.
Grease your waffle maker thoroughly and add portions of the mixture, cooking until the waffles are golden and cooked through.
If you don’t own a waffle maker, simply grease a frying pan and cook portions of the mixture as you would pancakes.
Make Breakfast Easier With a Little Meal Prep
And that’s my bulk breakfast meal prep done!
You certainly don’t have to prepare four different things at once. Even making a batch of pancakes or flapjacks at the weekend can give you something ready to grab on those mornings when everyone is in a rush.
You can also adapt all of these recipes to suit your family. Swap the salami for another filling, change the fruit in the pancakes or add your favourite extras to the flapjacks.
