In this post I share five halal sandwich filling ideas.
Perfect for lunch at work/school/home, or for jacket potatoes or sides in your meals at home. They can also be added to salad for a healthier option.
1) Pulled Chicken Filling

Ingredients required:
- Chicken Drumsticks x 2 (skin off)
- 1 tablespoon Sunflower Oil
- ¼ teaspoon Salt
- ⅛ teaspoon Red Chilli Powder
- 3 tablespoons Mayonnaise
- 1 tablespoon BBQ Sauce
Method:
- Heat the oil in a frying pan on medium heat. Stir in the salt and red chilli powder, then place the chicken drumsticks in the pan. Cook the drumsticks for 10-15 minutes or until chicken is cooked thoroughly (add a little water if too dry). Turn the drumsticks using tongs to cook all sides evenly.
- Transfer chicken to a large plate and allow to cool. Remove chicken from bones. Using two forks, pull the chicken into thin shreds (use one fork to hold the chicken in place, and the other to pull the chicken).
- Add 3 tablespoons of mayonnaise and 1 tablespoon of BBQ sauce to the chicken and mix well.
- Transfer to an airtight container and refrigerate.

2) Tuna, Olive and Mayo Filling

Ingredients required:
- 1 tin of Tuna Chunks
- 6-7 Pitted Black Olives
- 4 tablespoons Mayonnaise
- ¼ teaspoon Ground Black Pepper
Method:
- Drain the tin of tuna chunks and transfer to a small bowl.
- Mix in the mayonnaise.
- Slice olives into the bowl, add the pepper and mix well
- Transfer to an airtight container and refrigerate.

3) Cheese and Cherry Tomato filling

Ingredients required:
- ½ cup Grated Cheese (Cheddar or similar)
- 3 Cherry Tomatoes
- 2 tablespoons Mayonnaise
Method:
- Add the cheese and mayonnaise to a small bowl and mix well.
- Cut cherry tomatoes into quarters, and mix into the cheese mayonnaise mixture.
- Transfer to an airtight container and refrigerate.

4) Prawn Marie Rose filling

Ingredients required:
- ¾ cup Prawns (cooked and peeled)
- 1 tablespoon Ketchup
- 2 Tablespoons Mayonnaise
- ¼ teaspoon Lemon Juice
Method:
- Add the prawns to small bowl
- Make the marie rose sauce by mixing together the mayonnaise, ketchup and lemon juice.
- Add the marie rose sauce to the prawns and mix together.
- Transfer to an airtight container and refrigerate.

5) Smoked Salmon, Soft Cheese and Chives filling

Ingredients required:
- 60g Smoked Salmon Trimmings
- 3 tablespoons Soft Cheese
- 1 tablespoon Chives (chopped)
- ¼ teaspoon Lemon Juice
Method:
- Add the smoked salmon and soft cheese to a small bowl and mix well.
- Add the chives and lemon juice and combine fully.
- Transfer to an airtight container and refrigerate.
