In this post I share 3 recipes that I think your kids will love (because my kids do!)
- Homemade Doner
A delicious and healthy alternative to takeaway doner.
Ingredients:
- ~350g Lamb Mince (80/20)
- 1 Onion & Tomato (finely chopped)
- 1 Egg
- 1 teaspoon Garlic Paste
- 1 teaspoon Salt
- 1 teaspoon Coriander Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Red Chilli Flakes
- ½ cup Plain Flour
Method:
Preheat oven to 200°C/180°C Fan assisted
- Add the ingredients to a large mixing bowl and mix with your hand or a large spoon until wee combined.
- Transfer half the mixture onto a sheet of baking paper or foil, and flatten to create a thin layer of meat (0.5cm in thickness). Place the rest of the mixture onto a second sheet of baking paper/foil
- Place the meat onto oven racks, and bake in the centre of oven for 7 minutes or until brown. Turn doner meat halfway to cook evenly (optional).
- Slice the meat into 1 inch wide strips using a pizza cutter or large knife.
- Serve doner with naan/chips, salad and your kids’ favourite sauce.
2. Egg Muffins
Perfect for breakfast or as a snack, these egg muffins are great on their own or served with baked beans.
Ingredients:
- 8 Eggs
- ½ teaspoon Salt
- ½ teaspoon Black Pepper
- Salami slices (optional)
- 1 cup Grated Cheddar Cheese
Method:
- Preheat oven to 200°C/180°C Fan assisted
- Spray oil into a 12 cup muffin tray and set aside
- Whisk the eggs, salt and pepper in a large mixing bowl.
- Cut salami slices into small squares and mix with the eggs, then mix in the cheese.
- Transfer the mixture to a jug, then pour it into the muffin tray, splitting the mixture evenly between the cups.
- Bake in the centre of the oven for 10 minutes or until egg is fully cooked. Allow to cool for a few minutes then transfer to a serving plate.
3. Mini Chicken Bites
Ingredients:
- ~300g Chicken Breast (cut into small chunks)
- Oil for frying
Ingredients for the batter:
- ½ cup Plain Flour
- ½ teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Garlic Paste
- 1 teaspoon Paprika
- 1 Egg
- Milk (just enough to make a thick batter)
Method:
- Add the ingredients for the batter to a large mixing bowl and mix well to form a smooth batter.
- Add the chicken and coat fully in the batter.
- Fry the chicken in hot oil for a few minutes until golden brown. For a healthier alternative, bake or air fry the chicken bites. Drain on a plate lined with kitchen roll, and serve with your kids’ favourite sauce.
