Cheesy Vegetable Bake Recipe

Quick and yummy midweek meal, full of veg and cheesy goodness 🙂
Serves 4 | Preparation Time: 15 minutes | Cooking Time: 40 minutes
Ingredients Required:
For the veg:
- 1 Broccoli
- 1 medium Cauliflower
- 6 medium Carrots
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Chilli Powder (optional)
- 1 teaspoon Turmeric Powder (optional)
- 1 teaspoon Coarse Black Pepper
- 6-8 cups Water
For the sauce:
- 2 tablespoons Olive Oil
- 1/4 cup Plain Flour
- 2 cups Milk
- 1 teaspoon Salt
- 1 teaspoon Coarse Black Pepper
- 1/2 cup Grated Cheese
- 80g Breadcrumbs
Method:
Prepare the veg:
- Cut the broccoli and cauliflower florets off the heads, chop florets in half and add to a large colander.
- Peel and chop the carrots into large chunks and add to colander.
- Rinse the veg, add to a large pan with the water and bring to the boil. Leave in hot water for 10-15 minutes for the veg to cook further.
- Drain the veg, return to the pan. Add oil, salt and spices, mix well and cook on medium heat for a few minutes. Leave aside.
Prepare the cheese sauce:
- Add the oil to a small pan on low heat, and mix in the plain flour until it is a smooth paste.
- Add the milk, turn to a high heat and bring to the boil, stirring continuously until it thickens. If the sauce is lumpy, whisk lightly while still on heat to remove any lumps.
- Turn to low heat, add salt, pepper and cheese. Stir well and remove from heat.
Assemble the cheesy veg bake:
- In a large oven dish (or tray), layer the vegetables on the bottom of the tray.
- Top with the cheese sauce.
- Top with an even layer of breadcrumbs.
- Place in a preheated oven at 200C/180C Fan/4 for 5-10 minutes, or until the breadcrumbs are a golden brown.
