Cheesy Vegetable Bake Recipe

Quick and yummy midweek meal, full of veg and cheesy goodness 🙂

Serves 4 | Preparation Time: 15 minutes | Cooking Time: 40 minutes

Ingredients Required:

For the veg:

  • 1 Broccoli
  • 1 medium Cauliflower
  • 6 medium Carrots
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Chilli Powder (optional)
  • 1 teaspoon Turmeric Powder (optional)
  • 1 teaspoon Coarse Black Pepper
  • 6-8 cups Water

For the sauce:

  • 2 tablespoons Olive Oil
  • 1/4 cup Plain Flour
  • 2 cups Milk
  • 1 teaspoon Salt
  • 1 teaspoon Coarse Black Pepper
  • 1/2 cup Grated Cheese
  • 80g Breadcrumbs


Prepare the veg:

  1. Cut the broccoli and cauliflower florets off the heads, chop florets in half and add to a large colander.
  2. Peel and chop the carrots into large chunks and add to colander.
  3. Rinse the veg, add to a large pan with the water and bring to the boil. Leave in hot water for 10-15 minutes for the veg to cook further.
  4. Drain the veg, return to the pan. Add oil, salt and spices, mix well and cook on medium heat for a few minutes. Leave aside.

Prepare the cheese sauce:

  1. Add the oil to a small pan on low heat, and mix in the plain flour until it is a smooth paste.
  2. Add the milk, turn to a high heat and bring to the boil, stirring continuously until it thickens. If the sauce is lumpy, whisk lightly while still on heat to remove any lumps.
  3. Turn to low heat, add salt, pepper and cheese. Stir well and remove from heat.

Assemble the cheesy veg bake:

  1. In a large oven dish (or tray), layer the vegetables on the bottom of the tray.
  2. Top with the cheese sauce.
  3. Top with an even layer of breadcrumbs.
  4. Place in a preheated oven at 200C/180C Fan/4 for 5-10 minutes, or until the breadcrumbs are a golden brown.
